First French Onion Soup


So tried making homemade French Onion Soup, and it was pretty successful. We used what we had and I would definitely do it again. It would probably be a good dish to make for a large group. So for this I quirked up another recipe because there's just two of us, and like I said we used what we had.

ingredients...

3-3.5 medium red and yellow onions (we had half of a large onion already sliced in the fridge)
4 cups of chicken stock (you could use beef)
1 clove of garlic
1/4 cup of vermouth (or dry white wine)
1/8 tsp. of sugar
1/8 tsp. of thyme
1 small-medium bay leaf
old half a loaf of bread
swiss cheese (we put shaved parmesan, romano, and asiago combo and a shredded mozzarella--made the experience a little salty)
salt and pepper

now what...
- slice onions, then saute with olive oil. ten minutes in add the sugar.
- continue on your medium-high heat. make sure some caramelization and browning of onions.
- add garlic.
- after about 20-30 minutes add all liquids and spices.
- cut up your bread to large crouton size while you wait.
- simmer 10-20 minutes.
- ladle soup into oven capable vessel. place large crouton sized bread and cover with cheese.
- broiler on. watch until melting and browning occur.
- feast.
